No, seriously... holy guacamole! So good! I love guac and this recipe is sure to satisfy.
Tools you'll need:
Mixing bowl/Storage bowl
Fork
Veggie knife
Veggie chopper (or just use the knife)
Juicer
Ingredients:
4 - 6 Ripe avocadoes (Ripe ones are soft when lightly squeezed. They should not feel mushy, but not rock hard)
Cherry tomatoes (Put in as many as you want)
1/2- 3/4 tsp Cumin
1 - 2 Limes
Fresh cilantro (to taste)
1/2 Red onion diced finely or Use 1 - 2 shallots (depends on their size)
1/4 - 1/2 tsp garlic powder (to taste)
1/2 + tsp Salt (to taste)
Lemon juice (to sprinkle on top for storage to prevent the browning of the guac)
Instructions:
Cut the avocadoes length-wise all the way around and twist the halves apart. Remove the seed and use your fork (or get a spoon) to scoop the avocado into your bowl. Do that for all avocadoes. Use your fork to mash the avocado to your desired consistency. I personally like a creamier guac with just a little chunk to it.
Add the salt, garlic powder, lime juice, and cumin and stir. Taste and add more of any of the seasonings if desired.
Cut up your desired cherry tomatoes into quarters and add. Dice the onion finely with a chopper. Add both and gently stir into the guac with the fork. Either chop up or use your fingers to break the cilantro leaves into small pieces and mix into the guac. I personally love cilantro, so use a handful. You can use as much or as little as you want. Fresh cilantro is way better than dried. Voila! your guac is ready to serve with chips! To store, squirt some lemon juice over the top of the guac and put an airtight lid on the bowl. But, it is very possible it'll be gone before you even need to store it!
