Stuffed Figs


This is a sweet and savory finger food that is sure to delight! It is quick to whip up and throw together. You can use proscuitto, bacon, or no meat at all!


Tools you'll need

Mixing bowl

Fork

Cookie sheet

Paring knife


Ingredients

Dried figs

Tub of crumbled gorgonzola cheese

1/4-1/2 C bread crumbs

Shallot or small sweet onion finely diced

Garlic to taste

salt to taste

Rosemary, Thyme, Oregano

Water

2 Tbs melted butter unsalted

Almost cooked bacon OR uncooked proscuitto

Balsamic Glaze in a bottle


Instructions:

In a mixing bowl, dump the cheese, bread crumbs, onions, butter, and seasonings to taste. Use a fork to mix together. If it doesn't stick together enough, add a small amount of water until it begins to stick. You may want to switch to your hands.


Using the paring knife, remove the stem of the figs. Then, slice an "X" in the top and use your fingers to peel back the flaps. Stuff with a ball of the mixture. Wrap in either the half cooked bacon or proscuitto and place on a cookie sheet. Bake at 375 until the bacon is cooked or the proscuitto is browned and the filling is bubbly. Drizzle with balsamic glaze once placed on a serving dish. Don't over cook or the figs will be hard to bite/chew. That is why you want the bacon to be almost cooked. You can go without meat if you want it to be vegetarian. Mangia!
