Corn Souffle

This is one of my absolute FAVORITE side dishes at Thanksgiving... my favorite holiday and meal of the year! My nephews have lovingly dubbed this dish "corn cake". And they aren't wrong.


Tools you'll need

Corningware round casserole dish (about 1.5 qt)

Electric mixer

Measuring spoons

Liquid measuring glass

Large mixing bowl

Rubber spatula


Ingredients

1 14.5-oz Can creamed corn

1 14.5-oz Can whole corn, undrained

1 C sour cream

2 Large eggs

1 Tbs sugar

1 Stick unsalted butter, melted

1 Box Jiffy cornbread mix

Crisco to grease the casserole dish (or use Pam spray)

**Note: DO NOT use low fat options on the ingredients... it won't be nearly as good!

Instructions:

Grease the casserole dish. Put all the ingredients in the mixing bowl and use the electric mixer to beat together. Pour into the greased dish. Place in a pre-heated oven at 350 degrees and bake for 45-80 minutes. It truly depends on the depth of the dish you poured into on how long it will take. It should be solid like a cake, not watery or jiggly. When done, remove from the oven and serve! Mangia!
