Caramelized Onion Brie Puff

This will be the appetizer everyone will go crazy about. You'll be the most popular cook around!




Tools You'll Need:


Cookie sheet

Rolling pin

Skillet

Cutting board

Veggie cutting knife

Measuring Cups

Mixing spoon

Large spatula


Ingredients:

Puff Pastry sheets (Found in the freezer aisle)

Extra large vidalia onion

1/4-1/3 C. Sugar

Water

2 Tbs Butter

1 Tbs Olive Oil

Salt and pepper to taste

Milk or egg wash

Brie cheese wheel


Instructions:

Take out a pastry sheet and let thaw on the counter.

Heat the butter and oil in a skillet. While it's heating, slice the onion. Add the onion to the skillet and sprinkle with some salt and pepper. Let cook and stir occasionally until the onions are translucent and some are browning/burning to the bottom. Add the sugar and about 1/2 C. of water. Let the onions cook down until the the water is evaporated. Taste to make sure it is sweet enough while they are cooking down. If not, add more sugar.


Take the onions off the heat and let cool to room temperature. Preheat the oven to 350 degrees. Using the rolling pin, roll out the pastry sheet so that it is big enough to fit the cheese wheel and be wrapped. Once the onions are room temperature, place the onions in the middle of the pastry, then place the cheese on top. Using the milk or egg wash and your finger, fold the pastry and smear the egg wash on the seams and press together. Using a spatula, flip the brie pastry seam side down onto a cookie sheet. Brush the top with the egg wash or milk. Bake for 20-30 minutes until golden brown. Let sit on the cookie sheet for about 15-25 minutes before serving so the cheese can set a little. Serve on crackers or a good quality crusty bread. Mangia!
