Savory Meatloaf



Who doesn't love meatloaf? One of my favorite things to do with it is to make meatloaf, mashed potato sandwiches with ketchup. Seriously... try it. Stick to your ribs delicious!


Tools you'll need:


2 Bread pans

Non-stick spray

Small sauce pot

Whisk

Measuring cups

Liquid measuring glass

Measuring spoons

Mixing bowl

Veggie knife

Cutting board

Pre-heated oven to 400 degrees

BBQ sauce brush


Ingredients:


Meatloaf:

4 lbs 90% lean ground beef

2 Cups bread crumbs

1 Large onion finely diced

1 Cup whole milk

2 tsp Salt

2 tsp pepper

2 tsp cracked red pepper flakes

2 Tbs either red wine or Worcestershire sauce

3-4 Tbs Dijon mustard

2-3 Tbs ketchup

3 Heaping tsp minced garlic or 2 tsp garlic powder

4 Eggs


Glaze:

1 Cup ketchup

4 Tbs brown sugar

3-4 Tbs Worcestershire sauce


Instructions:


My first tip is to make sure all ingredients for the meatloaf are at least close to room temp. Nothing worse than sticking your hands into the super cold meat to mix it up. Trust me! Put all meatloaf ingredients in a large mixing bowl and use your hands to mix and mash it all together. It just works better than a wooden spoon. Once it is well mixes, spray the bread pans with the non-stick spray and divide the mixture into two equal amounts. Mash and roll the mixture into an oblong shape and place in the bread pan. Using your fingers, mold it to the shape of the pan.



Set the pans aside. On medium to medium-low heat, whisk the ingredients for the sauce in the sauce pan and let come to a bubble for a few minutes. Whisk frequently so it doesn't stick and burn. Let the mixture bubble and thicken for 5-10 minutes. Split half the mixture to pour over the meatloaves. Use a BBQ sauce brush to brush it over the whole top of each loaf.


Place in the oven at 400 degrees and bake for 30 minutes. Remove from the oven and split the rest of the sauce over the two loaves and brush across the entire tops. Then back for another 45 ish minutes. Remove from the oven and let rest for a good 10-15 minutes before cutting and serving. I recommend my perfect mashed potatoes with it, but I love putting in cheddar cheese to those taters too! Serve with a veggie of your choice... just to make yourself feel a little healthier ;-). LOVE these as sandwiches. Mangia!
