This bread has fantastic crust and is just oh so good! Sandwiches,toast, peanut butter and jelly... or use it to sop up gravy or spaghetti sauce!
Tools you'll need: Stand mixer (Or a large bowl) with dough hook attachment
Rubber spatula
Measuring cups
Liquid Measuring glass
Measuring spoons
saran wrap
2 bread pans
Non-stick spray
Small sauce pot
Whisk
Sifter
Ingredients:
7-9 Cups sifted all-purpose flour
1/3 Cup granulated sugar
4 Tbs (1/2 stick) unsalted butter melted
2 Large room temp eggs
1 heaping Tbs instant yeast
1 Tbs salt
2.5 Cups lightly scalded milk
Instructions:
Heat the oven to 375 degrees. In the sauce pot, heat the milk until it is warm but not scalding hot. If it is too hot, it will kill the yeast. Melt the butter and set aside to cool a little. In the stand mixer bowl, add the sugar, butter, and milk and whisk together. Add the yeast and whisk it to dissolve. Then let it proof for about 5 minutes or until it is frothy and foamy.
Add the eggs, salt, and half the flour. Using the dough hook attachment or a wooden spoon, combine on low speed. Then add in the rest of the flour. Use the rubber spatula to scrape the sides. Once the dough starts pulling away from the sides and isn't too liquidy, dump the dough onto a floured surface and knead it for several minutes until it is smooth, and slightly bubbly. Place in a greased bowl and cover with saran wrap. Place in a warm spot to rise. It should double in size and take 45 minutes to an hour. Cut the dough in half and form into two oblong rolls to place in the bread pans that have been sprayed with the non-stick spray. Cover loosely with saran wrap that has been sprayed with the non-stick spray. Place back in the warm spot for another 45 minutes to an hour to double in size.
Bake at 375 minutes for 35-40 minutes or until they sound hollow when lightly knocked on with your knuckle. This bread is great for meatloaf sandwiches ;-) Just sayin... Mangia!
