Can't have dairy or eggs? Love a rich, moist, and decadent cake? Then look no further!
You know what's super awesome about this cake other than it being absolutely delicious? Since there's no eggs or dairy, feel free to let the kids like the spoon and the bowl... or let's be honest, you'll do it too... no judgment... I do it too... ;-)
Tools you'll need:
Large bowl
Electric beater (Or a stand up electric mixer)
Rubber spatula
Two greased cake pans
Measuring spoons
Measuring cups
Liquid measuring glass
Sifter or a fine mesh strainer
Ingredients:
3 Cups all-purpose flour
2 Cups granulated sugar
2 tsp salt
2 tsp baking soda
1/3 Cup cocoa powder
1/3 Cup special dark cocoa powder (If you want really rich, use just 2/3 cup of this stuff)
2 Tbs white vinegar
2 tsp vanilla extract
2/3 cups vegetable oil
2 Cups COLD water
Instructions:
Using the sifter, sift all the dry ingredients together into the large mixing bowl. Then add the wet ingredients and beat for a few minutes until combined. Scrape the sides with the spatula as needed. Pour evenly into to greased/floured cake pans. Tap the bottoms of the pans on the countertop to even out the batter in the pans. Bake at 350 degrees for about 30 minutes or until the toothpick test in the center comes out clean. DO NOT over bake or it'll dry out. Pull out of the oven and let sit for a few minutes before moving them to cool on cooling racks.

Frost the center with cheesecake icing and the outside in the chocolate cream cheese frosting
I like to add chocolate chips to the outside after frosting for even another layer of decadent chocolate. If you like fruit with your chocolate (personally I hate chocolate and fruit.... but to each their own... haha), you could put a raspberry or strawberry reduction in the center. Mangia!
