Instead of making the eggs, sausage, and potatoes separately, why not just put them all in a dish and bake together? Yummm
Tools you'll need:
Mixing bowl
Skillet
Casserole baking dish
Non-stick canola spray
Wooden spoon
Pre-heated oven to 350 degrees
Ingredients:
12 large eggs
1 medium onion diced
2 lbs bulk ground breakfast sausage
1/4-1/2 Cup sour cream
1-1.5 Cups shredded cheddar cheese
1 bag tater tots
Salt and pepper to taste (I use 1/2-1 tsp salt usually)
OPTIONAL: 1-2 Cups spinach, 1 diced bell pepper, mushrooms, tomatoes... any veggies really...
Instructions:
Pre-heat oven to 350 degrees. In the skillet, cook the onion (and any veggie other than the spinach) and sausage together on medium to medium-high heat. Break the sausage up with the wooden spoon into small chunks. When done, drain about 1/2-2/3 of the liquid. Dump the meat and onion/veggie mix into the bottom of the non-stick sprayed casserole dish and spread evenly.
Whisk together the eggs, sour cream, salt and pepper until smooth and creamy. Then mix in the cheese, then the spinach. Dump over the meat in the casserole dish evenly. Cover the eggs and meat with the tater tots evenly. Bake at 350 degrees for 50-70 minutes (depends on how deep your egg mixture is and your particular oven). It took mine about 65 minutes. It is done with the egg is not liquidy or jiggly and the tater tots are nice and crispy on top. remove from the oven and let rest in the dish for 10 minutes or so before serving. Cut in squares and serve. I love putting Frank's Red Hot or salsa on mine! Mangia!
