Want something sweet but light? These baked apples are sure to satisfy!
Tools you'll need:
Cutting board
Knife to cut the apples in half
Butter knife
Melon baller or a spoon (perhaps even an ice cream scoop may work)
Cookie Sheet
Oven pre-heated to 350 degrees
Ingredients:
Unsalted butter
Apples (Number depends on how many people you wish to feed. Each apple makes two) pears would work well for this as well
Light brown sugar
Vanilla yogurt
OPTIONAL: Granola
Instructions:
Pre-heat the oven to 350 degrees. On the cutting board, slice each apple in half. Using a spoon or melon baller, scoop out the seed core to leave a crater in the middle of the apple. Place each half of apple on a cookie sheet. Generously sprinkle the apple with light brown sugar and place 1 tab (1 Tbs) of unsalted butter in the crater in the middle. Place the cookie sheet in the oven and bake for at least 20-25 minutes or until the apples are nice and super soft to pierce with a fork.
You may wish to make more caramel sauce in a sauce pan. If you do, take a stick of butter, 1/2 cup of brown sugar (or more) and a little vanilla extract and melt together on medium-low heat until it is thickened into a caramel sauce to drizzle on the apples when they are done cooking.
Put an apple half in a bowl and serve with a nice serving spoonful of vanilla yogurt and granola on top. Mania!
