Peach Cobbler


I love peach season! This is a tasty cobbler that really any fruit could be used. I am a fan of peaches and blackberries for this recipe!


Tools you'll need:

2 mixing bowls

1 Rubber spatula

1 Whisk

Measuring spoons

Measuring cups

Liquid measuring glass

Cheese grater

Vegetable peeler

9"x13" baking dish

Pre-heated oven to 425 degrees

Teapot or small sauce pot

Spoon


Ingredients:

Filling-

8-10 fresh peaches peeled and cut into bite-sized pieces

Juice of a fresh lemon

1/4 Cup granulated sugar

1/4 Cup brown sugar

1/4-1/2 tsp cinnamon

1/8-1/4 tsp nutmeg

2 tsp cornstarch


Mix the ingredients together and layer on the bottom of a baking dish. Bake for 10-12 minutes. Remove from the oven.


Cobbler Crust-

2-2.25 Cups all-purpose flour

1/2 Cup granulated sugar

1/2 Cup brown sugar

2-2.5 tsp baking powder

1 tsp salt

12-14 Tbs frozen butter grated with a cheese grater

1/2 Cup (or a little more if needed) boiling water


Directions:

After the filling is baked in the oven and removed, whisk together the dry ingredients of the crust. Then, grate the frozen butter with the cheese grater and mix through the dry ingredients. Add the boiling water and use the rubber spatula to mix it until just combined. There should still be some visible chunks of butter in the dough. Spoon dollops of the dough onto the top of the cooked peaches. Sprinkle with some sugar and cinnamon and bake for about 25 minutes or until golden brown and the dough passes the toothpick test. Serve warm with vanilla ice cream! Mangia!
