I love cheeseburgers and I love soup... so I decided, why not mesh them together? OMG drool!
Tools you'll need:
Large soup pot
Cutting board
Veggie knife
Veggie peeler
Ingredients:
2-3 lbs ground sirloin
1 large onion diced
4-5 stalks celery sliced and the leaves from the celery
1 28-oz can diced tomatoes
3 cans condensed tomato soup
1-2 32-oz can/box of beef stock
4 large carrots peeled and sliced
3-4 large potatoes peeled and cut in bite-sized pieces
16 oz heavy cream
1 bay leaf
1-2 bags shredded cheddar or colby jack cheese
4 Tbs flour
Olive oil
2-4 Tbs rosemary
2 Tbs thyme
1-2 tsp salt
1/2 tsp or more black pepper
2 tsp garlic powder
Instructions:
In a skillet, heat 2 Tbs olive oil and start cooking the diced onion until translucent. Add the ground sirloin and seasonings. Brown the meat. Add the celery and carrots while browning. Once the meat is cooked through, add the tomatoes, tomato soup, and beef stock. If more liquid is needed, add a little water. Let simmer for about 1 hour. Taste and add salt or other seasonings as desired. Then add the potatoes. Let simmer until the potatoes are cooked through (20 minutes or so). Then, toss the cheese in the flour and stir in the cheese and cream and stir until melted. I love cheese, so I used two bags of shredded cheese. I believe the bags were each 1 lb.
